Peach Pie Smoothie
Imagine a smoothie that tastes just like a slice of fresh homemade peach pie. Now stop dreaming, because this thick and creamy smoothie is exactly that. It’s made with fresh or frozen peaches, rolled oats, cinnamon, Greek yogurt, and a dash of cinnamon, and the best part is you can prep it all ahead of time. Toss everything into a zip-top bag, then store in the freezer until you’re ready to blend. It’s the ultimate make-ahead breakfast that’s as delicious as it is convenient.
Ingredients
- 2 medium peaches (preferably freestone), or 1 cup frozen sliced peaches
- 1/3 cup old-fashioned rolled oats
- 1/2 cup plain Greek yogurt
- 1/4 teaspoon ground cinnamon
- 1/2 cup unsweetened almond milk, plus more as needed
- 1 tablespoon honey
- 1/4 teaspoon vanilla extract
- Garnish options: diced peaches, old-fashioned rolled oats, and ground cinnamon
- Halve and pit 2 medium peaches, cut into 1/2-inch slices (about 1 cup), and add to a quart sized zip-top bag. (Alternatively, start with frozen peaches). Add 1/3 cup old-fashioned rolled oats, 1/2 cup plain Greek yogurt, and 1/4 teaspoon ground cinnamon. Seal the bag and freeze until solid, at least 2 hours and up to 3 months.
- When ready to eat, transfer the frozen ingredients into a blender and add 1/2 cup unsweetened almond milk, 1 tablespoon honey, and 1/2 teaspoon vanilla extract. (If the frozen fruit has stuck together, lightly hit it against the counter while still in the bag to break it up before adding it to the blender.)
- Blend on high speed until very smooth, 30 to 60 seconds, adding more almond milk if needed to thin it out. Pour into a tall glass and garnish with diced peaches, oats, and ground cinnamon, if desired. Serve immediately.
