Ingredients
For the dressing:
- 1/3 cup rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 3/4 cup olive oil

- 1/2 cup small-dice red onion
- 1/2 cup coarsely chopped fresh cilantro
- 1/2 cup unsalted roasted peanuts, coarsely chopped
- Make the dressing: Whisk the vinegar, garlic, honey salt, and pepper together in a small bowl. Set aside for 5 minutes to give the garlic time to mellow. Whisk in the oil until the dressing is emulsified.
