Chicken Primavera Bites
Chicken breasts are a weeknight dinner hero — they cook quickly and can be prepared in a bajillion different ways. But who among us hasn’t been burned by dry, boring chicken breasts before? I’ve had my fair share. That ends with these chicken primavera bites.
Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon kosher salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 2 tablespoons olive oil, divided
- 1 small zucchini, cut crosswise into 1/4-inch thick rounds (1 cup)
- 1/2 small head broccoli, cut into 1-inch florets (1 cup)
- 1/2 cup frozen sweet peas
- 1 cup cherry or grape tomatoes
- 3 cloves garlic, minced
- 1/2 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 ounce baby spinach (about 1 packed cup)
- 1 ounce Parmesan cheese, finely grated (1/3 cup freshly grated or 1/4 cup store-bought grated)
- Toss 1 1/2 pounds cut boneless, skinless chicken breasts with 1/2 teaspoon of the kosher salt and 1/4 teaspoon of the black pepper in a medium bowl until evenly seasoned.
- Heat 1 tablespoon of the olive oil in a large 12-inch skillet over medium-high heat until shimmering. Add half of the chicken in a single layer and cook until golden brown and cooked through, about 2 minutes per side. Transfer to a bowl. Repeat cooking the remaining chicken and transferring to the bowl.
- Heat the remaining 1 tablespoon olive oil in the same skillet. Add 1 sliced small zucchini, 1/2 small head broccoli florets, 1/2 cup frozen sweet peas, and 1 cup cherry tomatoes. Cook, stirring occasionally, until the vegetables start to brown in spots, about 4 minutes.
- Stir in 3 minced garlic cloves, the remaining 1/2 teaspoon kosher salt, remaining 1/4 teaspoon black pepper, and 1/2 teaspoon Italian seasoning. Cook, stirring occasionally, until fragrant, about 30 seconds. Stir in 1 cup heavy cream and scrape up the browned bits from the bottom of the skillet. Bring to a boil.
- Reduce the heat to low. Return the chicken to the skillet and add 1 ounce baby spinach. Toss until the spinach is just wilted, about 1 minute. Turn off the heat. Stir in 1 ounce finely grated Parmesan cheese.
