Cheesy Meatball Subs
Sandwiches may be considered a lunchtime favorite, but they’re far too tasty and satisfying to be enjoyed at only one time of day. Truly, a sandwich makes for the perfect unfussy dinner — utensil-free and all! So, stuffing saucy meatballs leftover from this classic spaghetti and meatballs dinner into crusty rolls and turning them into warm, cheesy subs is a wise decision, indeed.
Ingredients
- 4 (6-inch) sub, hoagie, or French sandwich rolls
- 20 leftover meatballs from Spaghetti and Meatballs in sauce or thawed frozen meatballs with 3/4 cup Prego® Traditional Italian Sauce
- 2 ounces shredded mozzarella or Italian-blend cheese (about 1/2 cup), divided
- Arrange a rack in the middle of the oven and heat the oven to 375°F. Line a rimmed baking sheet with aluminum foil.
- Split 4 (6-inch) sub sandwich rolls down the top. Divide 20 leftover meatballs in sauce between the rolls. Top evenly with 2 ounces shredded mozzarella or Italian-blend cheese (about 2 tablespoons per sandwich).
- Bake until the cheese is bubbly and the meatballs are heated through, 20 to 25 minutes.
